Wunga Waffles

This requires a deep pantry of flours, but is pretty good!

You want 4 cups of flour, the exact values are flexible but I suggest:

1 3/4 cup whole wheat
3/4 oat bran
3/4 flax seed meal
3/4 buckwheat
1 t kosher salt
1 t baking soda
1 T baking powder
---
1/4 cup sugar
1.5 T Vanilla
1 quart buttermilk
1/3 cup neutral oil, like canola
---
3 eggs
2 bananas

Mix-ins (dried blueberries, chocolate chips, whatever)


Mix the dry ingredients together in a big bowl

Mash the bananas in a medium bowl
Add the eggs, beat until well mixed
Add the rest of the wet ingredients (sugar, vanilla, buttermilk, oil)

Pour the wet ingredients into the dry and stir until just combined
Add in whatever mix-ins, stir gently

These waffles do better on darker settings (I used a 5 on a scale 1-6)
